
We conduct all production processes, from grape processing, vinification, ageing, and bottling, inside the cellar built by our family in 1879, with an adjoining barrel cellar dug into the tuff rock where our reserves mature in oak barrels.
Over the past three decades, we have modernized it with respect for winemaking tradition and the historic architecture, allowing us to precisely control the environment where our wine matures and its health, especially bacteriologically. Controlled temperatures and cleanliness are essential for us to produce stable wines without the use of invasive methods. Steel and concrete tanks are cooled by a system powered by photovoltaic panels, which have covered approximately 92% of our winery's energy needs for over 10 years.
