Antico Palmento is a family-run business located in the center of Manduria. It was born from the passion of Bruno Garofano, who, after forty years of collaboration and winemaking consultancy for various Apulian wineries, decided to share his experience with his three children, thus launching a winemaking business in the heart of one of Puglia's most renowned wine regions.
Bruno's dream, always supported and encouraged by his wife Lina, came true in 1998 with the acquisition of several hectares of vineyard and a "palmento" dating back to the early 1900s.
The entire production process takes place within the facility, which has been restored to working order through careful conservation and renovation. Some underground tanks have been glazed and returned to winemaking; others, connected to one another, are reserved for wine maturation and bottling.
Finally, a space is dedicated to hospitality, with the organization of cultural events, courses for wine enthusiasts, and tastings of wines and typical products.
The production philosophy, both in the vineyard and in the cellar, is always the same: no shortcuts, very few targeted interventions.
The aim is to produce wines in limited quantities that best express the territory.
The focus is on native varieties. The focus is on the area's flagship grape: Primitivo.
The art of making wine is to accompany a natural process as it unfolds, remaining faithful to ancient traditions but always aiming to apply innovative techniques.
This is how essential and authentic wines can be created, stripped of the superfluous and capable of seducing and going straight to the heart.
