1759 is a structured, intense, and complex sparkling wine, with a fine and persistent perlage. It has the typical aroma of the Classic Method, with pronounced yeasty aromas (bread crust and vanilla), along with notes of pear, hawthorn, and dried fruit. It is particularly creamy on the palate and very persistent.

It pairs well with all meals (except desserts and some particularly structured dishes such as game or truffles), as an aperitif, with all types of fish and all preparations, and with white meats such as poultry and rabbit.

La nostra famiglia ha fondato l’azienda vitivinicola I Pàstini nel 1996 nel cuore della Valle d’Itria in Puglia, in questo lussureggiante fazzoletto di terra tra gli agri di Locorotondo e Martina Franca.

Obiettivo primario è stato il recupero e la valorizzazione dei vitigni di antica coltivazione della Valle d’Itria.
Così è cominciata la ricerca in giro per i vigneti più antichi di quelle varietà i cui caratteri erano impressi nella nostra memoria.
E così furono contrassegnate viti antichissime da cui prelevammo le marze dalle quali ricavammo le preziose gemme di innesto.

Un lungo lavoro che ci ha permesso di realizzare il nostro progetto. 18 ettari meravigliosi e, nel settembre del 2003, finalmente, è stata effettuata la prima Vendemmia.
