Antico – I Pastini
A white PDO wine of ancient tradition, Antico was born in the heart of the Valle d'Itria, where viticulture has roots in a millennial history. As the name suggests, it is a wine that respects the ancient farming knowledge, recovering cultivation and winemaking practices that express the most authentic identity of the territory.
The three native white grape varieties are cultivated with the traditional Apulian "alberello" (bush vine) system, planted from the beginning according to precise proportions. The entire process – from vineyard care to harvest, destemming, and vinification – takes place simultaneously, despite the different ripening times. This ancient method of mixed-field vinification, now rediscovered and enhanced with the support of modern oenological techniques, allows for an extraordinarily balanced wine, rich in harmony and personality.
Visually, it presents a clear straw yellow, enriched with greenish reflections. On the nose, it offers fruity and fresh aromas, with hints of green apple, citrus, and wild herbs. The palate is dry, full-bodied, and structured, with a long and pleasantly savory finish, reflecting the integrity of the territory from which it originates.
A wine to be enjoyed young, it is ideal as an aperitif and pairs naturally with fish dishes, seafood, shellfish, and delicate Mediterranean appetizers.
