Vintage sparkling wine, made from Negroamaro grapes vinified in white, 30 months on the lees, traditional method in two versions: zero dosage and brut.

The journey began in 2013, when the idea of producing a sparkling wine, always cultivated by Carlo and Giuseppe Coppola, materialized in the company's development plan. Together with enologist Giuseppe Pizzolante Leuzzi, they discussed the production of a traditional method sparkling wine from white-vinified Negroamaro.

In 2014, preparation work began in the vineyard for the new vinification. In August 2015, the Negroamaro harvest for the sparkling base took place, and in 2016, the base was bottled with the tirage operation (bottling). The following months were dedicated to the delicate process of fermentation and aging. On April 19, 2018, the first disgorgement took place: the 2015 vintage was born.

PAIRINGS

Traditional Method sparkling wines are highly versatile wines, suitable for consumption throughout a meal. Dispelling the taboo of their use being associated with festive occasions, these wines actually offer a wide range of food pairings. The essential rule for a perfect pairing is to distinguish the various types based on sugar dosage and the duration of aging on the lees, pairing by harmony or contrast.

The effervescence of Metodo Classico pairs well with dishes with a predominantly sweet flavor, such as cereals, rich in starch, pasta and rice, vegetables and shellfish. Its pronounced acidity, on the other hand, is an ideal pairing for the taste sensations of structured dishes, meats and aged cheeses.

The vintage Brut, with a softer taste, is excellent throughout the meal and is well suited for a fresh aperitif but also for gourmet and elaborate cream-based desserts. Its structure also pairs well with substantial fish and roasted meats. Finally, why not try it with a classic Margherita pizza? The starch of the base and the balance of its ingredients combined with the bubbles will surprise you.

Immersa in un polmone verde, tra vigneti, ulivi e un giardino botanico con oltre cento specie arboree la Cantina sorge a Gallipoli, a due passi dal mare, all’interno della “Tenuta Patitari Torre Sabea” nel posto dove un tempo vi erano le stalle con fienile e una casa colonica, estesa su una superficie complessiva di 1000 metri quadrati.

Quattro i corpi fondiari di proprietà della famiglia Coppola, tramandati per generazioni da padre in figlio, a partire dal più antico, la Tenuta Li Cuti.
Ubicati nei Comuni di Gallipoli, Alezio e Sannicola, sono distanti tra loro appena 5 chilometri.
Questo permette di vinificare tempestivamente le uve appena raccolte, garantendo freschezza e qualità al prodotto. Trascorrono, di fatto, solo pochi minuti da quando il grappolo viene reciso dalle mani esperte dei nostri collaboratori, al momento in cui mani altrettanto esperte continuano a prendersi cura degli stessi nella delicata fase della trasformazione.
