Chianca Nuda is a white grappa obtained from the pomace of Minutolo grapes, distilled in an ancient distillery using the traditional steam method to preserve the softness of its taste and the freshness of its aromas.
It is a young white grappa, with a transparent, clear, crystalline color and an oily appearance.
The aromatic profile is straightforward, generous, and immediate, with a balanced, intense, and round taste.
When savored, one can fully appreciate the aroma of the pomace freshly removed from the vats after winemaking, bringing back the typical pleasant scent of Minutolo during the harvest period to the glass.
It presents distinct notes of withered rose, apricot, plum, and a slight citrusy hint.
It confidently displays all its 43 alcohol degrees but manages to present them with fruity and soft elegance.
Chianca Nuda pairs perfectly with chocolate, fruit desserts, parfaits, and cigars.

Chiancanuda - White Minutolo Grappa

La nostra famiglia ha fondato l’azienda vitivinicola I Pàstini nel 1996 nel cuore della Valle d’Itria in Puglia, in questo lussureggiante fazzoletto di terra tra gli agri di Locorotondo e Martina Franca.

Obiettivo primario è stato il recupero e la valorizzazione dei vitigni di antica coltivazione della Valle d’Itria.
Così è cominciata la ricerca in giro per i vigneti più antichi di quelle varietà i cui caratteri erano impressi nella nostra memoria.
E così furono contrassegnate viti antichissime da cui prelevammo le marze dalle quali ricavammo le preziose gemme di innesto.

Un lungo lavoro che ci ha permesso di realizzare il nostro progetto. 18 ettari meravigliosi e, nel settembre del 2003, finalmente, è stata effettuata la prima Vendemmia.
