A typical organic preserve from the Apulian tradition, our aubergines in extra virgin olive oil are made following an ancient family recipe. Harvested in the summer months, they are hand-cut and immersed in our extra virgin olive oil, obtained from Bella di Cerignola olives, to preserve their authentic flavour and delicate consistency.
With their delightful and genuine taste, they are ideal for enriching appetisers, aperitifs, finger foods, and main courses, or to be enjoyed as a side dish full of character.
How we make them
The aubergines are grown in our fields according to organic farming principles and harvested only when they reach the right degree of ripeness. The artisanal processing, manual selection, and preservation in extra virgin olive oil guarantee a healthy and natural product, perfect to enjoy all year round.
Our philosophy

In the historic Masseria Contessa Staffa from 1700, in Cerignola, we produce wines, preserves, pickled vegetables, and ready-made sauces, all entirely zero-mile, to bring the true taste of Puglia to your table.
