How we make them
The olives are grown in our fields according to organic farming principles and harvested at the right degree of ripeness. After careful manual selection, they are immersed in a light brine that preserves their color, crispness, and original aroma. Processing takes place entirely in our masseria, ensuring a zero-kilometer product with an authentic taste.
Our philosophy
Since 1993, Antica Enotria has been cultivating and processing organic raw materials with respect for the land and tradition. In the historic Masseria Contessa Staffa from the 1700s, in Cerignola, we produce wines, preserves, pickled vegetables, and ready-made sauces using exclusively ingredients grown in our fields and our Coratina extra virgin olive oil, with its fruity aroma and slightly spicy aftertaste.
