Naturally dried under the warm August sun and preserved in our organic extra virgin olive oil, Antica Enotria sun-dried tomatoes encapsulate the full intensity of Apulian flavors. The preparation follows the traditional recipe: a few genuine ingredients, patience, and respect for nature's rhythms.
With a bold and persistent flavor, they are perfect for enhancing appetizers, friselle, rustic sandwiches, and salads, or for accompanying fresh and aged cheeses.
How we make them
Hand-picked in our fields, the tomatoes are laid out on white cloths and left to dry slowly in the sun until they reach the right consistency. Subsequently, they are immersed in our extra virgin olive oil, obtained from Bella di Cerignola olives, to enhance their flavor and ensure natural preservation.
Our philosophy
Since 1993, we have cultivated the land with passion, respecting the principles of organic farming and traditional Apulian recipes. In the historic Masseria Contessa Staffa from the 1700s, in Cerignola, we produce wines, preserves, and ready-made sauces using only raw ingredients grown in our fields. Each product is processed according to seasonality, to bring the authentic taste of our land to your table.
