Tasting Notes
Full straw yellow color, after the first 2 or 3 years in the bottle, slight golden reflections appear.
Intense nose, broad bouquet, opens with a range of aromatic herbs, sage and rosemary above all, followed by citrus notes and hints of white-fleshed fruit. Medium-bodied palate, added value in terms of drinkability, excellent persistence and incredible coherence with the nose. The finish is elegant, supported by good acidity.
Suggested Pairings
A lively, intense, and long wine, it needs to be contextualized and 'tamed'. Recommended pairings include
fatty fish with good spice, but also white meats with medium oiliness.

HEARTFELT PAIRING Murgia vegetable timbale (wild chicory and cardoncelli mushrooms).

Historic vineyard (1998) in Contrada Zingariello. Alta Murgia 480 m. a.s.l., calcareous soil.

Production
Fermentation in steel at controlled temperature, with selected indigenous yeast strains. Aging for 5 months in steel tanks in contact with its fine lees.
